Delicious!   Healthy!  Celebrates the Irish in all of us!

 

Corned Beef Bites

List of ingredients:

1 lb of Marr's Valley View Farms Pre-Cooked Sliced Corned Beef

1 cup Sauerkraut- drained and lightly packed

1 small bottle of 1000 Island Dressing

6 to 8 ounces Baby Swiss Cheese

1 package of cocktail rye slices

Parsley Flakes-dried

 

Preparation Instructions:

Place 8 to 10 individual cocktail rye slices on a cookie sheet or rack of toaster oven. Add 1 to 2 slices of Marr's Valley View Farms Sliced Corned Beef on top of each cocktail rye.  Top with 1 to 2 tablespoons of sauerkraut.  Spread 1000 Island dressing over sauerkraut.  Top with 1/8" to 1/4" thick sections of Baby Swiss Cheese.  Sprinkle generously with parsley flakes.

 

Cooking instructions:  Place in oven under 400 degree broiler for 1 to 3 minutes until cheese melts and begins to brown.  A toaster oven takes a little longer.  Remove from oven. Place on serving tray.  Best when eaten fresh out of the oven.

Recipe serves 3 to 4.  We serve these as appetizers or mini sandwiches with soup or salads.
